Basic Cupcake Recipe
110g/4oz Self-Raising Flour, Sifted
110g/4oz Caster Sugar, Sifted
1 tsp Baking Powder
2 Large Free-Range Eggs
Mix Sugar and margarine together. Add in the two free-range eggs and mix. Add sifted flour and baking powder and fold mixture. Add vanilla extract to taste. Put in pre-heated oven 160C/325F/Gas Mark 3 for 20 minutes, or until golden.
Simple Coconut Topping
1 Packet of Coconut Cream (not coconut milk or will be too runny!)
Enough Icing Sugar to make mixture thick
Mix together and leave in the fridge to thicken, then top cooled cakes with it.
